Cranberry Oatmeal Spice Muffins



I've made these muffins without the cranberries before (adapted from here) and they've always turned out great. Sometimes muffins can be finicky, but this seems to be a fail proof recipe. Plus, they are gluten-free if that's something that concerns you. The cranberries add tartness to the muffins and I think they are really good, but you could add more sugar if you wanted. Also, they are a good source of protein with the oats and the nuts and lower in fat with the applesauce. So here's the yummy recipe:

Cranberry Oatmeal Spice Muffins

3 1/2 cups oats
1 tbsp baking powder
1/2 tsp salt
1/2 tsp nutmeg
1 tsp cinnamon
1/2 c pecans, chopped
3/4 cup unsweetened applesauce
3/4 cup sugar
2 eggs
1 tsp vanilla
1 cup milk
2 1/2 tbsp butter, melted
1/2 c cranberries

Preheat oven to 350.
Blend oats to flour-like consistency.
In mixing bowl, add oats, baking powder, 
salt, nutmeg, cinnamon and pecans.
In another mixing bowl, add applesauce, 
sugar, eggs, vanilla, milk and butter. 
Mix wet and dry ingredients until just combined.
Fold in cranberries.
Pour into greased muffin tin and bake 18-20 minutes.
