Toddler Approved Egg and Broccoli Bites


I made these based off of this recipe and Walker LOVED them! I didn't get a picture of him eating them because they were gone before I turned around. Mike and I think they taste great too. You could substitute any veggie and/or cheese you want to better suit your tastes. They are super simple and I will definitely be making them again.

Egg and Broccoli Bites

2-3 cups cooked broccoli
6 eggs
1/2 cup bread crumbs
1 cup shredded cheddar cheese

1. Preheat oven to 375 and grease a mini muffin tin
2. Cut broccoli into bite sized pieces
3. Beat eggs and then mix in all other ingredients
4. Spoon mixture into muffin tin
5. Bake for 18 minutes or until eggs are cooked through

I can't wait to try these with different veggie combinations! Enjoy!

  4. These look so yummy! My kids don't have an issue with broccoli but are sensitive to dairy and dairy alternatives. Any suggestions for cheddar substitutions?

    1. I bet you could leave the cheddar out and they would still be delicious. You could add more herbs or seasoning for more flavor maybe?
