I came up with this pasta dish to use as a freezer meal for when the baby comes. I don't have a lot of recipes that freeze well so I'm having to brainstorm and create some dishes that use ingredients we already keep on hand. Anyway, it turned out awesome! Here's the recipe:
Creamy Baked Pasta
1 box whole wheat pasta
1 jar spaghetti sauce
1 lb. ground beef
1 small container sour cream
1/2 cup Parmesan cheese
1 bell pepper, chopped
1 cup mushrooms, chopped
1 c shredded mozzarella for topping
1. Preheat oven to 350
2. Cook pasta and drain
3. Brown ground beef
4. Saute bell peppers and mushrooms
5. Heat sauce, sour cream, and parm. cheese on low heat until creamy
6. Add beef, veggies, and pasta
7. Pour into large greased casserole dish
8. Sprinkle mozzarella on top
9. Bake for 30 minutes

ReplyDeleteHam and Potato soup freezes wonderfully, let me know and I can post the recipe on here. Fill a mason jar a little less than full, then when reheating just add a little milk or water.
ReplyDeleteLasagna, cinnamon rolls (for breakfast), BBQ freezes GREAT for sandwiches.
Having the meals on hand really helps!Try to get some disposable plates and plasticware if the budget allows. I would strongly suggest meals high in fiber! Just trust me. :)
ReplyDeleteMmm - that sounds like a delicious freezer meal. Chicken pot pies also freeze well, and every mom I know has been big on using the crockpot during those first few baby months, too.
ReplyDeleteI love having freezer meals when a new baby is coming! I made a lot of lasagna, tacos, stuffed peppers, for dinners and muffins, biscuits, and zucchini bread for quick breakfasts.
