Appetizer Potluck


I hosted an Appetizer Potluck tonight and it was a huge success! Everyone brought such delicious dishes! (We had more than what's pictured, but I didn't think to take a picture until everyone left.) The recipe I made was really easy and turned out great! It's called Mexican Bruschetta:

Mexican Bruschetta
1 skinny loaf whole wheat french bread
guacamole
1 can Mexican diced tomatoes
3-5 pieces bacon, crumbled
olive oil

Preheat oven to 425
Cut bread into 1/2 inch thick slices and place on cookie sheet
Spray bread with olive oil (or drizzle)
Bake 4-6 or until bread is crunchy
Spread guacamole onto bread and add a spoonful of tomatoes
Top with bacon

 You could omit the bacon for a healthier version.
