I've only made pico de gallo once before this and it tasted kinda like onion water. Not so good. This time I used garden fresh tomatoes and The Pioneer Woman's recipe, so how could I go wrong?
This stuff is sooooo delicious and addicting!!
Pico De Gallo
equal parts tomato, onion and cilantro (chopped)
1 jalapeno diced and deseeded
juice of half of lime
salt to taste
Mix up all ingredients and enjoy!!
*NOTE: After 24 hours it will start to get mushy so only make enough for one sitting.
As a Mexican and a Texan, I've got to throw in my to cents here for tweaks to this recipe for a more authentic flavor:) My family has always done about two parts cilantro to one part onion, one part tomato. We typically use one bunch of cilantro, one roma tomato and a quarter of an onion. Do your best to chop the tomato as absolutely tiny as you possibly can without crushing it. The key to what we call the "pico" is using a cerrano pepper and not a jalapeno. Cerranos are very powerful so I would suggest using only about half of one per batch and dicing it extra super fine. Additionally, finish it off with some fresh ground pepper and a teaspoon or so of cumino. Then for the best flavor, let sit in a covered dish in the fridge for several hours before serving.

ReplyDeleteI make this all the time except add diced avocado too. We use it as a dip, on top of chicken, on fish, in tacos...I probably make it twice a week!
