Southwestern Chopped Salad

I made a modified version of this recipe for dinner tonight and it was really good! Here it is:

Southwestern Chopped Salad

3 c. chopped lettuce
1 c. chopped, cooked chicken
1 can black beans, rinsed
1 can corn, rinsed
1/4 c. shredded cheese
1 bunch green onions, chopped

dressing:
1/4 c. miracle whip
3-4 packets taco bell sauce
1 tsp dried cilantro

1. mix miracle whip, taco sauce, and cilantro in small dish
2. in a large bowl, toss all other ingredients
3. pour dressing over and toss

Avocados and pico de gallo would be wonderful in this as well!

  1. This looks so yummy! I will have to try it next week for sure especially with all of our garden lettuce. I like that it is quick and easy too!
