I made this pie yesterday in honor of the Kentucky Derby and it was delicious! It basically tastes like a big chocolate chip cookie. I like the recipe because it's simple with few ingredients. This could become an annual tradition. Don't forget to wear your wide brimmed hat while baking! Enjoy!
Kentucky Derby Pie
from At the Picket Fence
1 cup sugar
1/2 cup flour
2 eggs, slightly beaten
1 stick butter, melted
1 cup pecans, coarsely chopped
1 cup chocolate chips
1 tsp. vanilla
1 unbaked pie crust
1. Preheat oven to 325
2. Mix sugar and flour
3. Add eggs and butter blending well
4. Add pecans, chocolate chips and vanilla
5. Pour mixture into pie crust
6. Bake for 45 minutes or until toothpick comes out clean
I make derby pies every year for our annual Derby party and our guests just love them! And you are right...they are super easy! I actually make mine with a little splash of bourbon in it since practically every Derby dish has a little KY flavor. Hats off to I'll have another, this years champion! I hope he can pull off the triple crown.
