
I don't know how many people actually noticed, but there was a pumpkin shortage last year because the crop was bad. During the 2009 Holiday season canned pumpkin was pretty scarce and after the holidays it was nowhere to be found! I've been searching grocery shelves all year now with no luck. (A friend of Mike's family did give me some homemade pumpkin puree that I have yet to use. I'm looking forward to seeing how it compares to the canned variety.) Anyways, last week my sister called me and said that she found pumpkin and bought me some cans!!!!! YAY!!!! I am totally going to stock up this year. I love to use pumpkin in baking to make breads and muffins. I have never made a pumpkin pie, but maybe this is the year to do it!
If you've never considered baking with pumpkin here are a few good reasons:
*Naturally low in calories and fat
*Good source of Fiber
*Excellent source of Vitamin A
*Contains Antioxidants
Also (I haven't tried this, but I'm going to!) you can get any cake or brownie mix and simply add a can of pumpkin to it. Apparently it turns out great! I am getting hungry just thinking about it. Here is an easy recipe I just found that looks really yummy!
Chocolate Chip Pumpkin Brownies
- 15 oz Libby's canned Pumpkin
1 box Duncan Hines Chewy Fudge Family-Style brownie mix
1 oz Mini Semi-Sweet chocolate morsels (approx 264 morsels)
Mix Pumpkin and Brownie mix together.
Gently fold in chocolate morsels.
Spray muffin tins with cooking spray.
Spray muffin tins with cooking spray.
Bake in mini-muffin tins for 16-18 minutes at 350.
Makes 36 mini-muffins.

I also want to try pumpkin waffles and pumpkin chili. I am so excited that canned pumpkin is available again! I've been wanting to bake with it for so long now! So everyone get excited and go get some pumpkin, but leave some for me please! :)

I made the recipe and its pretty good, but kinda thick and fudge like. Anyways, I think they are gonna still be shipping more pumpkin as they harvest it. This was just the first batch to hit the stores. :)
