Favorite Recipes

I thought I would share some of my favorite recipes. I make these at least once a week because they are affordable and super delicious! I really like recipes that use a minimal number of ingredients and are easy to prepare. Feel free to share your favorite recipes too! Enjoy!

Hamburger Hash Brown Casserole

1lb ground beef or turkey, cooked
2 cans cream soup (I use mushroom)
1/2 cup milk
frozen hash brown patties

Mix soups and milk together.
In a medium size casserole dish layer with meat and hash brown patties.
Pour soup mixture over and bake for 30 minutes at 350.

Pizza Pasta

1 box pasta
2-3 cans stewed Italian tomatoes
1/2 package mini pepperonis
cubed mozzarella
canned or fresh sliced mushrooms

Cook pasta and drain
Add stewed tomatoes and pepperoni
Saute mushrooms in medium saucepan (only if using fresh) and add to pasta
Add cubed cheese to individual servings and enjoy!

Missy's Chicken Salad

Chicken tenderloin cooked and shredded (could substitute with canned chicken)
Boiled Eggs, peeled and chopped
Miracle whip
Sweet relish

Mix and enjoy! I didn't give quantities because I really just guess depending on how many I am cooking for.

When Values Collide


I will admit it. I love food. I think, read, dream, and talk about it every day. I love to watch documentaries, read books, magazines, and blogs all about food. It captivates me. I try to be healthy (although I have MANY downfalls and weaknesses like my addiction to Dr Pepper that I am currently trying to break). I'm not perfect. I don't sprout my grains or buy grass fed beef. Being healthy is a process and I'm trying to make better choices every day. Sugar and chemical laden convenience food is hard to quit when that's what you've grown up on, but I'm trying. I go to the farmers market when I can. I make the best choices I that I know of at the regular grocery stores. I buy local raw honey. I cook a lot from scratch. I'm making progress.

However, today I went with my mom to a local health food coop grocery store and about passed out with sticker shock. You see (this may not come as a surprise), but I am very cheap. I love to save money and spend as little as possible on the highest quality items I can find. I was raised this way. I can not be any other way. So when I saw that a gallon of Organic Milk was $7.99, I almost had a heart attack right there in the store. I just couldn't bring myself to buy it or even pick it up. I went down every aisle and passed up a lot of things on my list because it was too much for me to spend. I bought a few bags full of things that I thought were decently priced, but I don't think shopping there will become a regular occurrence for me. Eating healthy and being a good steward of my body is a very strong value in my life, however I have to be able to do it on a budget and do the best I can with what I have. At this point saving money is also a very strong value and I will have to find a place of balance. Don't get me wrong I think the coop grocery store is a good resource and I'm glad it's available, but its so hard for me to spend that much on food. (We don't have any chain health food grocery stores here.) So it is my prayer that I would make the best choices that I can with the resources that I have available to me and continue to learn and improve on my journey to a healthy, balanced God glorifying lifestyle!

Seeds Family Worship

I just discovered a set of scripture memorization CDs produced by Seeds Family Worship. They have five different CDs with scripture set to music. Watch the video below and you will have the verse memorized I promise! I've been humming it all day! :) This would be such an awesome tool to use with children (or anyone) in helping to commit scripture to memory. Also each CD comes with an extra copy so that you can give it away!

Hippie Cabin

Mike's parents own lots of land (1400+ acres) a few hours from us and they just recently bought a cabin with 80 acres three miles from there house. It was built by a hippie in the sixties or seventies. Its pretty awesome inside. It has wooden hinges and locks on the front door and kitchen cabinets. Also its an octagon shape and the floor is all wood so its pretty impressive that he built it himself. He was a very talented hippie ha. Anyways, staying here is not for the faint of heart. It has no running water (it used to so it has a toilet that you flush with creek water from a bucket), no electricity (there are a few lights that are run on a car battery), and no smooth road that leads to it (you definitely have to have 4 wheel drive to get here). Its pretty spooky at night driving if you don't know where you are going, but once you get there its well worth it. It has a two acre clearing where the cabin is with a creek at the bottom of the hill and its so peaceful and beautiful. We went there this weekend with my parents and a family friend. We had so much fun sitting by the campfire (again spooky because there are NO lights around and who knows what kind of animals are close!), shooting skeet, riding four wheelers, and shopping at the local Amish grocery store (my personal favorite). This is where we stay when we visit his parents so we will be spending many more holidays and weekends here.

Pumpkin is BACK!

I don't know how many people actually noticed, but there was a pumpkin shortage last year because the crop was bad. During the 2009 Holiday season canned pumpkin was pretty scarce and after the holidays it was nowhere to be found! I've been searching grocery shelves all year now with no luck. (A friend of Mike's family did give me some homemade pumpkin puree that I have yet to use. I'm looking forward to seeing how it compares to the canned variety.) Anyways, last week my sister called me and said that she found pumpkin and bought me some cans!!!!! YAY!!!! I am totally going to stock up this year. I love to use pumpkin in baking to make breads and muffins. I have never made a pumpkin pie, but maybe this is the year to do it!

If you've never considered baking with pumpkin here are a few good reasons:

*Naturally low in calories and fat
*Good source of Fiber
*Excellent source of Vitamin A
*Contains Antioxidants

Also (I haven't tried this, but I'm going to!) you can get any cake or brownie mix and simply add a can of pumpkin to it. Apparently it turns out great! I am getting hungry just thinking about it. Here is an easy recipe I just found that looks really yummy!

Chocolate Chip Pumpkin Brownies
    15 oz Libby's canned Pumpkin
    1 box Duncan Hines Chewy Fudge Family-Style brownie mix
    1 oz Mini Semi-Sweet chocolate morsels (approx 264 morsels)

Mix Pumpkin and Brownie mix together.
Gently fold in chocolate morsels.
Spray muffin tins with cooking spray.
Bake in mini-muffin tins for 16-18 minutes at 350.
Makes 36 mini-muffins.

I also want to try pumpkin waffles and pumpkin chili. I am so excited that canned pumpkin is available again! I've been wanting to bake with it for so long now! So everyone get excited and go get some pumpkin, but leave some for me please! :)

My Split Style Personality

I just discovered a website called Polyvore where you can create your own design boards. Its so much fun to do! I created two different style sets which represent the two sides to my fashion personality. I am part 50s Housewife and part Free Spirit. Ha weird combination. The Free Spirit side is way stronger because its more comfortable, affordable (any thrift store skirt will do!), and easier to pull off. However when its time to dress up I pull out my pearls and curls! (Whoa that was cheesy) Anyways, here is my fashion personality:
